Scheduling graphic artist

Everything in our shop has timed standards applied to it. I am struggling to schedule and estimate our designers time and duties. Anyone care to share some insight from there shop?
What are there duties?
How do you estimate art time?
do they do seps too? How much do they get done in a day on average?

For my shop, the one thing I can not do is force creativity. You can look at a project and guess it'll take two hours until you are an hour deep and still can't find the right font. Everything else can be time lined, but for me -art is not one of them. I know since I do it all, some days you just don't feel creative....
...keep doing what you're doing, you'll only get what you've got...

One size doesn’t fit all in art. For this reason we custom quote projects and I do so based on years of understanding how long I think those projects will take. But some go faster than expected and some go longer, that’s the game.

Each of my artists do several hundred fees in art per day. They do not do seps. They are too busy doing the actual art to do sept. We are booking April for our lead artist. Booking 2-3 weeks out on our other 2 artists.
