Title: Annoying Illustrator Issue

We use placed DCS/PSD files in Illustrator to generate our films from as I am sure a lot of us do. I notice that I can select a spot color that is found in my placed file, select it, and merge it with an existing color in that Illustrator file to change the color of the vector element. I need to do the reverse though.

Is it possible to change the spot colors in a placed document by merging the swatches with a color from the .AI file? I would like to generate several different colorways of a print from the one placed file. The merge option is greyed out right now when I try this. It's bumming me out.
