I use place all the time with CS5. This works really great if you have stock seps and you want to add text then you can use the same spot colors as in the seps for text or other objects. Just leave your channels turned on in photoshop and everything else off. The image will look a little weak (washed out) in illustrator if you use dot gain settings in photoshop but should not have any problems. Hope this helps.
