I just found this forum and joined, so I could respond to your post.
I'm a greeting card artist and use an Epson Workforce 600 to print my cards. For the past couple years I have been noticing side affects (headache, burning throat, burning eyes, tingling nose) and am convinced I'm allergic to these inks. When I don't print for a couple weeks, symptoms subside -- so it's been a process of elimination. I keep my windows open and I assure you I am not intentionally huffing the inks. Epson's MSDS sheet was of little help -- they use the term "proprietary" to avoid listing specific chemicals.
I'm in the process of deciding what to do, as I realize this is a serious issue which is not going away. There is not a lot of info on the internet re: inkjet ink allergies/hazards. Most of the info seems to be in regards to laser inks/powders.
