For some jobs I will offer a pretty low price if they let me use art I've already done and they don't gripe. 

I can knock out a minimal color piece in very short order and make it financially friendly on the client.

I've done this with as few as 2 colors and as many as 6.  In this case I'd like to do 4 but I don't want to tax the printer with too much mixing.  Sometimes its nice to just let the piece fall where it may.  In general they come out pretty nice.  It's a cool compromise.

Sometimes a limited color print that comes out just beautiful can be most rewarding.  Adding colors make the job easier but as you stated, more taxing.
