I have a Pricelist and have had it for years but it came with the Business. I would like to make another one but really am not sure where to start to make a new one for Contract Printing. I am just believing the one I have is accurate but have no clue.

The first thing you need to do is to make a really accurate survey and assesment of your expenses. (not the expenses claimed by the previous owner)
Then, as I pointed out in the PM to you, there are more appropriate sections here to discuss business strategies and specific pricing. This section is pretty much devoted to the software programs that help you manage your business. These will come into play for you as well, but only after establishing some baselines to plug in.
