Grayscale advice

Job coming up with image covering a broad grayscale spectrum. We're printing this with 2 inks - 3 at max. Plastisol only. (No discharge.) 100% cotton black fashion tees. Current plan is Cool Gray 8c with white on top, 230 mesh, 50lpi halftones. 2nd solid white if necessary for bright areas.

I have a way to separate this... but it's kind of clumsy. I rarely do this kind of work. SO: Any advice on best practices for this? I'm especially interested in how to properly create the create the grey base + white layers/screens?

I'm doing everything in Photoshop CS5. I know how to output halftones just fine, so no worries there. I'm really trying to figure the best way break down the grayscale into gray & white (and black from shirt, obviously.)
